The Tortilla Thing Is Real
Here's what La Casita does that almost nobody does anymore:
They make their tortillas fresh every day using nixtamalization — an ancient technique where corn is treated with an alkaline solution before grinding. This process improves the nutritional value, changes the texture, and produces a flavor that simply cannot be replicated with a bag of masa from the grocery store.
Most people have never had a tortilla made this way. The first time you eat one, you notice it immediately — deeper flavor, better texture, something that actually tastes like corn instead of just smelling like it.
