Twin Falls Mexican Food Review: La Fiesta at #3 — And That Mole Poblano

January is my Mexican Restaurant Review month.

I've been doing this for a few years now — eating at every Mexican restaurant in Twin Falls, ranking them honestly, and sharing my findings with the community. Why? Because when someone new moves here and asks me where to eat, I want to give them a real answer.

La Fiesta is number three. And it earns that spot with something specific that most restaurants in Twin Falls can't touch.

What La Fiesta Does That Nobody Else Does

The menu at La Fiesta covers everything you'd expect — tacos, burritos, enchiladas, tamales, quesadillas, fajitas — all prepared carefully with quality ingredients and served with rice and beans. Chips, salsa, and excellent guacamole round out the starters.

But here's what puts La Fiesta in a category of its own:

The Mole Poblano.

This is a traditional Mexican sauce made from over 20 ingredients — chocolate, nuts, spices, chilies — built up in layers over time. It's complex. It's rich. It's the kind of dish that takes real skill and real patience to execute correctly. And La Fiesta does it. I have not seen it done this well at any other Mexican restaurant in the Twin Falls area.

Also order: The ceviche — raw fish marinated in lime juice, cilantro, and spices. Fresh, bright, and a perfect change of pace if you usually go straight to the tacos.

To drink: Horchata, Jarritos, or Mexican beer. They have all of them.

Service is consistently friendly and attentive. The restaurant is always clean. The staff goes above and beyond without making a production of it.
